Granny P’s Healthy Crunch Tuna Salad
This is going to for sure be on the Granny P’s Catering Menu. I was just trying something new with tuna today and thought let’s just load it down with veggies, for go the egg, add some vinegar and herbs and see what happens. So first I diced 1 small carrot, 2 small celery ribs and yes the leaf goes in as well, mince that part. Now I added 1 small tender zucchini squash small diced, 1/3 cup green cabbage rough chopped, a medium sized yellow onion diced and a splash of white vinegar, you can use a champagne vinegar or an herbed vinegar would be great as well, like a tarragon or a rosemary anyways I digress. After I got all of the veggies diced and added the splash of vinegar then I sprinkled on just a touch of salt, a dash of dried rosemary, a dash of hot pepper flakes, a sprinkle of turmeric, a large sprinkle of garlic powder, gave it a quick stir and covered it up. I like to use a glass bowl when I am making anything with vinegar sometimes a metal bowl just doesn’t work well with vinegary things. After the veggies had marinated in the herbed vinegar mixture and soaked it up, about 20 minutes, then I added 2 small cans of tuna (I like to use live caught tuna packed in oil not water, the ones packed in water have way too much sodium for my liking) (Also I completely drain my tuna through a wire mesh strainer and then I press with paper towels to make sure that they tuna is as dry as possible) nothing worse than sloppy Tuna Salad. Now I added in about 1/3 cup of mayo, gave it another quick stir, covered it back up and chilled for about an hour, letting all of the flavors marry together. Then plated up the tuna salad, and added 1/2 half of a thinly sliced pear on top. Nice edible garnish adds a little extra color, crunch and a nice finish to the salad. I ate mine with a few pretzel sticks. This was a test recipe so I didn’t really have any fabulous breads or crackers around. In the future I think I will try this with some slivered almonds on top. A little sprinkle of dried rosemary and it was done. I think it turned out really well. Pretty to look at, healthful for the body and quite tasty too. You should try it.
